Gender (and non-gender) Identity - facilitating requirements within a student records system

How is information relating to gender identity recorded and communicated and how much input does the student have in to the management of their details? We have to be flexible in our approach to records management whilst also maintaining a robust data system that meets reporting requirements and GDPR compliant. How, in practice, do we achieve this?

This would be an information sharing session primarily targeted towards Student Records Officers responsible for formal and informal communications with students.
